In fact, bread leavening baskets retain heat and allow the dough to develop vertically for a taller, shapely loaf.
Flour the basket and place the dough with the closing side up, cover with a damp cloth and let it rise in a warm place. After the first rise, turn the basket upside down and start folding again. Flour the basket again and proceed with the second rise. Once the dough is ready, place the microperforated baking sheet and reusable baking paper on top of the basket and gently invert the basket. Remove the basket and place the risen bread to bake in the oven.
Use the bread rising basket instead of the classic ceramic and plastic bowls, you will notice the difference immediately!
