Monday, April 14, Via San Marco 2: Appointment at 'N'ombra de vin' with Daniele Biondi, founder and director of Rumclub and consultant in the beverage sector, and ACR Rum, Authentic Caribbean Rum.

The ACR brand belonging to WIRSPA (West Indies Rum & Spirits Producers' Association Inc.) has begun to promote these meetings in various nations to launch its Certification Program, divided into two phases: the first precisely that of seminars in their own country that have as spokespersons industry professionals such as Daniele and the second 'in the field,' that is, directly in the Caribbean, to visit distilleries and learn more about the production processes.

WIRSPA is a true association of associations, since the 15 countries that belong to it are protected, helped but also controlled, that is, they follow the same regulations despite producing different types of the distillate in different ways.

The seminar was proposed as a three-hour lecture (albeit among friends) complete with tasting of 13 (very tough) Rums and detailed explanation of each one, going through the difference between traditional and agricòl Rum, continuing with the basics of processing; plus, unfailing tables on world production zones and related, molasses tasting and of course sugarcane passamano to feel the raw material from which it all begins.

Some of the proposed Rums are still untraceable in the Italian territory, while others are better known, but the tasting tour undoubtedly enhanced the singular and unmistakable characteristics of each product. Added interest was then added by Daniele with his expertise, and all the rest was done by the bartenders who, thanks to the passion they adopt every day, choose to delve into the more technical aspects of their work.
