How Absinthe is served
Absinthe should be prepared by pouring the desired amount into a glass, placing a slotted teaspoon with a sugar cube on top of the glass and slowly pouring ice water over the cube so that the sugar dissolves and falls into the Absinthe. It is important that the water be added very slowly, and it must be as cold as possible; only in this way can one appreciate the gradual unfolding of the various aromas that will manifest first to the sense of smell, and then to the palate. The amount of water to be added is subjective, although one must at the very least allow the liquor to complete the louche (the cloudiness that makes it milky as the water is poured in), because otherwise it is possible that not all the aromas will then be appreciable in tasting; once the Absinthe has completed the louche one can add water according to personal taste.
