Invented in 1830 by German Loeff, siphon coffee was replaced by electric coffee machines in the 1950s.
Few have thus continued to use this method, but it is now making a comeback, especially in Japan, where world specialty championships are being held.
HOW DOES THE COFFEE SIPHON WORK?
The siphon consists of a burner and a metal frame, which holds the two jugs and filter (made of paper, nylon or metal) in which the coffee is brewed.You start by boiling the already hot water in the carafe at the bottom, after which you place the other carafe on top, adding the single-origin ground coffee. To help you with the dosage, you can take advantage of the two notches that portion it out.
When the water starts to rise, you stir for a minute with a bamboo spatula, so that the coffee can de-gush and absorb the water more evenly.
According to the Japanese school, it is then necessary to stir a second time, so that the coffee creates layers over the filter, and thus a double filtration. Siphon coffee is indeed known for its pure and clean taste.
When all the water has risen, the flame is finally removed and the coffee begins to descend into the carafe below due to pressure and the force of gravity.
THE SIPHON ALSO USED FOR REVERSE NEGATIVE EXTRACTION
The siphon can also be used for lovers of flavored brews.Here's how.
Place an alcohol base in place of water and add dry ice, which will boil the water without the need for a stove.
At the top, instead of coffee, you place the ingredient you want to make theinfusion of. You then let the water rise, thanks to the pressure, and create the brew. This will end only when the chemical action of the dry ice is exhausted and the whole thing begins to descend. This is the signal that the infusion is completed.
