The Kilner lt 3 Fermentation Kit is perfect for creating fermented foods such as sauerkraut, kimchi, pickles and more.
Making it is very simple, just add your favorite vegetables, water and salt.
PACKAGE CONTENTS
- a 3-liter glassfermentation jar, perfect size for making and storing your creations;
- a wooden lid, designed to keep oxygen out of the jar, a prerequisite for fermenting;
- an airtight chamber and cap that allow the safe release of gases;
- 2 ceramic stones, to keep foods submerged under the salt brine;
- recipes and instructions, to make the most of the kit.
USE
To help you understand how best to use this kit we will give you the example of how to makesauerkraut (sauerkraut) by fermenting cabbage.- Finelychop the white cabbage, place it in a bowl and sprinkle with sea salt;
- Pound the cabbage to release the liquid;
- Place the cabbage in the jar by pressing it down. IMPORTANT: Always make sure to leave a maximum headspace of 2.5 inches/6.5 cm at this stage. This is essential as food and liquids expand during fermentation.
- Add the ceramic stones to the jar making sure they are well placed so that they cover the cabbage on the surface. IMPORTANT: Make sure that foods and liquids are always submerged during fermentation by the salt brine and ceramic stones. If you should find any on top, remove and discard them.
- Seal the jar with the lid, add airlock and stopper. Then fill the airlock with water.
- Allow to ferment 4 to 6 weeks.
Tips for proper fermentation
Let us now turn to some practical tips and recommendations for proper use.- The fermenting jar should always be kept at a temperature between 17.8 and 24°C (64 to 75°F);
- Once the jar is ready, place it in the refrigerator to slow down the fermentation process;
- We recommend that you check your fermenting foods constantly;
- You may notice that foam appears on the surface: this is perfectly normal and can be removed using a skimmer or stainless steel spoon;
- Should mold form, throw away the whole batch and start again;
- Always make sure the lid adheres well to the jar ensuring an airtight seal;
- Always use filtered water and salt without iodine and anti-caking agents.
CARE
The glass and stones are dishwasher safe, while the cap, lid and airtight chamber are hand washable only.Do not pour boiling water directly into the jar.
Avoid the use of abrasive sponges.
Wash before first use and each time you use it, removing any food or juice residue.
WHAT IS FERMENTATION
Fermentation is one of the oldest and most basic methods of preserving food.Fruits and vegetables contain naturally occurring bacteria that, when deprived of air, allow them to suppress and inhibit the growth of other microbes that can cause spoilage.
During the fermentation process, these natural bacteria convert carbohydrates and sugars in whole food products to an acid that then becomes the ideal environment for preserving that food.
Lacto-fermentation, a process carried out through the presence of lactobacilli, gives fermented foods and drinks their characteristic tangy and sour taste, but also creates probiotics that aid digestion.
