Filleting knife from the Riviera line by Arcos, ideal for meat but not only. An indispensable model for every chef.
What is NITRUM®
NITRUM® steel is an Arcos registered trademark designed and manufactured in Spain, synonymous with unparalleled quality. It is an exclusive nitrogen steel formula that gives greater hardness, more cutting power and increases the durability of the edge. This type of environmentally friendly steel is only available in Arcos knives. Its new microstructure makes a difference in knife performance in both professional and home use. The manufacturing process of NITRUM® is environmentally friendly. Nitrogen is present in the atmosphere, so its enrichment process does not produce negative effects in the air, water, and land.
Forged steel
The forging process to which the Santoku is subjected is by deformation to bright red, a process from which a solid knife is obtained in one piece. This operation consists of deforming the steel, which has been previously heated to bright red, inside molds called 'forging dies' that make the shape determined by the knife. In order to achieve this deformation, presses of large tonnage are used, as a strong blow is required in order to achieve plastic melting for the deformation of the steel and thus obtain the shape predetermined by the die. With this process, a one-piece solid steel knife is thus obtained, avoiding unwanted welded, bonded or hollow areas, which are indicative of low quality, as they are areas of low mechanical strength, with the possibility of breakage or possible oxidation points.
Polypropylene handle
The Arcos spirit of ensuring the best possible product has led the company to collaborate with AIMPLAS (Technological Institute of Plastics) to obtain the most reliable materials. The handles must have ergonomic qualities and achieve maximum comfort in use, whether professional or domestic. The knife must simulate the extension of the arm, and the handle must also achieve a perfect fit to avoid any tension while using the knife. To achieve a better result, Arcos performs separate processing steps to smooth and clean the handles, in order to achieve a smooth and optimal finish and perfect harmonization between the steel of the blade and the material of the handle.
Unique rivets
One of the improvements applied by Arcos and now strongly characterizing the company was the inclusion of stainless steel rivets, replacing the aluminum ones previously used. These new rivets, in addition to improving and facilitating the assembly of the handles, due to a higher subjection force, greatly increase the resistance to corrosion, never allowing the handle of the blade to detach, an effect mainly due to corrosion itself.NSF health food guarantee
The Santoku, part of the Riviera Bianco series, is guaranteed by the prestigious American NSF (National Standard Food) health food certification.High technology for total anti-bacterial protection
The inclusion in the handle composition of a sophisticated silver-based technology, Bactiproof Silver®, prevents the growth of bacteria and ensures excellent performance in hygiene and safety. This system functions as a powerful inhibitor of bacteria, germs, molds and fungi. As a result, the knife handle has the necessary tools to protect the plastic from the appearance of stains, bad odors, and microorganisms harmful to health. In short, this technology makes Arcos knives the best allies in the kitchen, the environment where hygiene is paramount.Don't forget that each Arcos knife is manufactured in Spain with the best machinery and then evaluated by careful, expert eyes of those who have always worked to guarantee their customers the perfect knife.
