WHAT IS IT AND WHERE DOES IT COME FROM?
The Cataplana is a cooking tool typical of the southern part of Portugal, or rather the Algarve region. Made of thick copper, it features a hand-hammered surface. It also features hinges, handles and clamps also made strictly of copper. The origins of this tool are lost in time; certainly used as early as the 20th century, it is, however, from the 1960s that it became a symbol of Portuguese popular cuisine.
TECHNICAL CHARACTERISTICS OF THE MATERIAL
Copper is second only to silver in thermal conductivity and is among the most durable. Heat is distributed more evenly inside, thus ensuring perfect and homogeneous cooking.
Cooking with the Cataplana is a completely different experience than using traditional pots and pans, but the results are outstanding, especially if the choice of dish falls on fish and shellfish recipes in particular.
In favor of Cataplana, it must be added that it allows ingredients to be cooked without the addition of fat and limits the loss of food properties, ensuring flavor and wholesomeness at the same time.
FOR THE LAZY
If the Cataplana is a great tool for cooking, it is even more so for presentation. If you don't want to use it for cooking, we recommend that you still offer it to your guests' table for serving-they are sure to be ecstatic!
HOW TO TREAT IT.
Best not to wash it in the dishwasher; we recommend using lemon and salt, vinegar and coarse salt, or even vinegar and yellow flour mixture. A unique item that needs more careful and less aggressive treatment.
A product that will give you enormous satisfaction and allow you to make dishes that are incredibly healthy but full of taste and flavor.
INSTRUCTIONS FOR USE.
This copper utensil has an outer layer of varnish to prevent oxidation while it is kept in the pantry, or loss of luster if it is just for display.
If you only want to use it for decoration, then do not remove the protective layer of varnish.
Wipe it off with a soft cloth.
If you plan to use it for cooking, then the varnish must be removed. Here's how to do it:
Fill a pot with enough water to completely submerge the copper item. Add 1 tablespoon of baking soda per liter and bring to a boil.
Submerge the article in the water (removing the wooden or bakelite handles first, if there are any) and let it boil for 15 minutes. The paint film will come right off. Wash the utensil with soap and water, wipe dry with a cloth. To keep the outside shiny, use a metal cleaning product. If you notice that paint is left in places, it can be removed by wiping with a wool cloth soaked in acetone.
Do not use the item in the oven or on the stove without checking for liquid or grease.
Remember that you must remove all paint before using the item. If you do not, it will darken with heat.
WAY TO CLEAN COPPER AFTER USE
Copper gets stained when it gets hot. It is best to put the utensil immediately after use in hot water with soap to soak up food remains. Then wipe the utensil with a soft cloth. Do not use abrasives in its cleaning.
To give shine to utensils already without paint, use nonabrasive product indicated for polishing metal, or lemon.
