This pasta press makes it easy to make both short pass atelli for broth and long passatelli to be eaten dressed with sauce. This is a traditional but still up-to-date way of working fresh pasta, according to family custom, the one by which the best regional fresh pasta is still made.
BRASS PASSATELLI TOOL: HANDMADE IN ITALY
Thepassatelli tool, handmade in Italy, is made of solid brass. Several pasta-drawing dies are available to choose from and can be interchanged on the press; dies must be purchased separately because they are not included.
BRASS PASSATELLI TOOL: TIPS AND WARNINGS
We recommend never closing the top completely, at the handle, because a vacuum is created that prevents it from opening: a possible solution is to insert a rubber band or rubber gasket for the coffee pot of 3; if the top should get stuck, to open it the press should be placed in a clamp, protecting it with a cloth. The first few times it is used, it is necessary to wash it and remove the first 2 cm of spilled paste and that which twists around the steel screw.
To remove any marks from the outer surface, wipe with a rag with white or apple cider vinegar. Dry very carefully, especially the inside of the tube, after use.
