If you are into potting, you need to arm yourself with the right tools to do it right: Weck jars, rubber gaskets, and specific Weck jar springs.
These are small steel hooks, available in packs of 12.
Using them is very simple: introduce all the ingredients into the jars, then place the rubber gaskets on the rim, rest the lids on top, and to ensure an airtight seal, seal with the Weck jar springs.
The choice of how to cook everything is up to you: in the microwave on medium power or on the stove in a bain-marie (making sure to put a tea towel between the jars ) or even in the ventilated oven (60° to 150°) with water.
You just have to keep in mind small tricks, such as closing the jars tightly with these special hooks, to make sure that the cooking proceeds properly and then ... keep an eye on it so that nothing gets brown :)
Potting is not yet widespread, but more and more chefs are becoming so passionate about it that they are creating entire menus dedicated to it. Recipes can also be replicated at home, letting your imagination run wild.
Use Weck jar springs and match them to the jar that's right for you. Our suggestion is to remove them along with the seal before serving the jar at the table, which is certainly elegant in presentation, but more elegant without springs. Fear not, the glass stopper will help keep the recipe well warm.
