White has always been associated with the idea of clean, healthy and natural. But for Ballarini, a white-coated cookware is not exactly like a clear-coated cookware. The new Ballarini Professional Series 2600 with Kerastone Profi White is decidedly different from standard ceramic utensils on the market. What the company strongly wanted for catering professionals is a truly nonstick coating: this is the key feature that leads the product to have inimitable pluses. And this is its qualitative proposal as an alternative to ceramic because by its nature ceramic is not nonstick.

The company's technical manager, Eng. Francesco Ferron, introduces us to the features of the new clear nonstick.

First of all, it is a true nonstick and therefore unlike a ceramic coating it boasts important strengths that can be summarized in four substantial pluses. You can wash the utensil in the dishwasher without compromising the properties of the coating. It is by its nature very resistant to scratching, and in any case, any nicking allows the utensil to be used safely. The very high thermal stability of Kerastone Profi White ensures total inalterability over time even at high thermal regimes. In fact, according to laboratory testing by the German LGA Institute, Kerastone Profi White has abrasion resistance characteristics identical to those of the best nonstick coatings. For example, the test shows that scratch resistance and nonstick durability are far superior to utensils with ceramic coatings. Finally, let's not forget that a true nonstick allows cooking without the addition of seasonings and is therefore also ideal for light cooking.
