The scarcity of water resources is well known, but not as widespread is the desire for savings and wise management, all the more necessary in territories where waterways are lacking and the hot-arid climate is accompanied by low rainfall. For this reason, the Juniper Environmental Education Center of the Municipality of Ostuni, together with the Coastal Dunes Regional Natural Park, the Torre Canne Regina Tomato Producers' Association, a Slow Food Presidium, the Community of Olive Growers of the Secular Olive Groves of Puglia and the Slow Food Piana degli Ulivi Local Condottalocale have launched an important environmental and food education project entitled Little water much taste - eat good, clean and fair, aimed at the students of Ostuni to emphasize the need for the proper use of water resources in agriculture, deepen knowledge and encourage the choice of local and seasonal products.



Attention all focused on the territory and traditional crops such as olive, almond, fig, vine, ancient agricultural varieties that well represent a proper balance between environment and agriculture. Together with farmers from local farming communities, with lectures and playful activities, the children learned how important it is in a land like Puglia to save water with organic farming and how much is saved with a diet rich in fruits and vegetables (local and in season) and less meat. Starting in May (first appointment on Saturday 5 to be followed by two more on the 12th and 26th), guided tours of the farm will kick off to see firsthand the implementation of what was learned at school. Each appointment will be enriched by environmental theater performances and Taste Workshops featuring oil from centuries-old olive trees, cheeses from pasture-raised animals, pasta and bread from organic durum wheat as well as local varieties of vegetables grown in aridoculture.

Theater, rural wisdom, environmental, food and taste education to bring kids closer to choosing good, clean and fair food.
