Bevendo S'Impara... with Paolo Schiano
Nitro Brew is one of the fastest growing trends in the world of coffee and beyond.
The Austrian company iSi, which specializes in professional siphons, has therefore come up with a way to create Nitro Tea, Nitro Coffee and Nitro Cocktails, a way that Paolo Schiano - barman of Piacenza's Battisti, Nessie Pub and Sottomura del Chiosco establishments - brought to the public's attention at the seventh and final event organized by RG mania Bevendo S'Impara last Nov. 26. In fact, in one of the variants of his creation that Paul performed of the Old Fashioned, the Nitro Whip iSi siphon in lt 1 steel plays a key role.
Old Irish Dude, the recipe

OldIrish Dude, Old and Irish for the union of the drinks it is inspired by (Old Fashioned and Irish Coffee), while Dude is the original language name of Drugo in the movie The Big Lebowski.

To make coffee, or as in this case cocktails, cold, simply add nitrogen, initiating a spectacular cascade effect and thus making the drink unique and personal; in fact, nitrogen creates a creamy, velvety texture and a long-lasting frothy top for drinks and infusions. The closed system designed by iSi has many undoubted qualities: head and bottle designed for professional use made of stainless steel and NSF approved; high-quality silicone gasket with removal tab for quick and hygienic cleaning; non-slip silicone grip head and fixed stainless steel valve for easy dispensing in all Nitro infusion applications. A great little masterpiece
"My idea is to use iSi's new siphon by combining two of my favorite cocktails, The Irish Coffee and precisely the Old Fashioned, all while emphasizing the simple and immediate dispensing of the siphon, which can only be used with the appropriate canisters. By adding carbo-nitrogen, the added values are frothiness and consistency. You go to carbonate the drink but with a silky and very small bubble, plus it forms a beautiful creamy foam. Hence the reference to Irish Coffee, but with an extra touch of bergamot given by Earl Grey Tea, then sugar, Angostura and Irish whiskey, to go back to Old Fashioned."
