It is not easy to write something new about Dario Comini, winner of several bartending competitions at the Italian and international level. A guest at the "Summer Drink&Eat Festival 2012" organized in San Lorenzo di Castell'Arquato by RG Commerciale, we had a chance to chat with him. Comini says he was "Born behind the counter," as he comes from two previous generations of bartenders: his grandfather, in fact, practiced the trade in the United States, while his father owned more than fifty establishments in the Milan area; among them, Dario chose to take over, now 42 years ago, the "Nottingham Forest," located on the Navigli.
Comini describes himself as "an all-around professional who, with the help of a chemical consultant, has specialized in molecular mixing, the drinking version of Spanish chef Ferran AdriΓ 's famous spherification." The highly qualified opinion of what to call a bartender is reductive, projects us into a future full of optimism regarding Italian professionals, whom Comini calls "the best in the world, the most qualified." But don't ask him about his possible heir: "I don't think it's fair to mention just one name, there are many, many present here as well."
