Researchers from Azti-Tecnalia, a center specializing in food technology in collaboration with the Bilbao Academy of Design, have attempted to chart food trends between now and 2020. It is not a question of what will be the trendiest dish or product, but what values or characteristic traits food will have to carry and what the marketing outlets might be. The study, it admits at the end, hopes to convey these findings as an opportunity for the food industry to take inspiration and anticipate consumer desires.

Here are the "Top 8 Food Trends for2020"(we leave the titles in the original language as they sometimes contain untranslatable puns):

1 Food Telling. Food with a message. Responds to demand for transparency and accessible information. Connects the consumer with the product while providing food with authenticity and identity.

2 Supersense. Multisensory experience. Not just mouth and nose, but intense stimulation of all senses for an original, enjoyable, complete experience.

3 Slowcal. And here we in Slow Food feel a bit called upon.... Greater awareness and responsibility regarding our food choices with an eye to the social, economic and environmental spheres.

4 Here & Now. Facilitates the lives of urban commuters who demand flexibility so that they can better manage their time: fulfillment in a short time of desires at any time.

5 Eater_tainment. Pamper yourself through memorable experiences that relate to the needs of individuals. Adventure, fun, surprise and entertainment are an added value of the product.

6 MadeSimple. Be simple. This is reflected in the ability to find flexible solutions that enable smart buying without overthinking or wasting time. Give services and tools that make the consumer's life easier in short.

7 MyHealth. Personalized health. Prevention and maintaining one's well-being. A diet adapted to personal needs for achieving physical, emotional, mental balance.

8 EgoFood. Food as an individual expression (or part of a group). Personification of one's desires, values and aspirations in a market tending toward massification.
