FORGING
All forged knives are made from martensitic steel, which is a different material from the 18/10 stainless steel used to make the rest of the cutlery. This is because the knife is produced by forging process, i.e., hot working, and therefore a material suitable for this type of treatment must be used.Hot processing, however, tends to change the technical characteristics of the material thus making the product, in some respects, more delicate than the rest of the cutlery.
In order not to run into any kind of problem, all manufacturers recommend that:
1)wash knives in dishwasher baskets separately from the rest of the cutlery;
2)preferably wash knives with the blade facing downward;
2)dry knives thoroughly after washing;
3)use neutral detergents;
4)do not let knives soak in water for a long time;
5)do not let knives soak in vinegar or lemon, as they are corrosive;
4)check that the washing system is working properly.
